Thanks for checking out “Gatherings”!! This recipe is from Chef Dino Bugica of Diavola Pizzeria & Salumeria in Geyserville, a small town just a bit north of Healdsburg. But don’t let the name of his restaurant fool you! Beyond the world class brick oven fired pizzas, house made sausages and old world style salumis, Chef is a master of open flame grilling. This recipe is a carnivore’s delight, topped with a full blast of Summer’s tastiest treats. Fire up that grill and serve this up to your friends and family – you will be a god amongst mere mortals!

The man responsible for all the winemaker selections and pairing for “Gatherings” is Kevin Wardell – somm, owner of Bergamot Alley and congameister – choose a Barbera from Unti Vineyards. Hard to find but ask your local wine purveyor for something that will stand up to the bold flavors of the beef and bacon while matching the fruit in the salad topping. Your favorite Zinfandel will do nicely, too
